The Founding Table
The Founding Table is a limited series of private tasting experiences marking Chef Robear’s arrival in New Orleans. A small number of dates are being offered at a preferred founding-client rate — a deliberate introduction to the cooking and to the people who will shape its early chapter in the city.
Each dinner is composed around the season, the occasion, and the gathering — five to six courses expressing Louisiana ingredients through the discipline of French fine dining. The table is set in your home or a private venue of your choosing, for four to eight guests.
Founding Table hosts receive preferred introductory access in exchange for helping document this opening chapter through food photography and a brief post-experience testimonial.

Chef Robear's cooking is grounded in the discipline of French fine dining and shaped by the flavors of New Orleans, the Gulf, and the broader South. He served as a sous chef for Daniel Boulud and later worked for Aarón Sánchez at Johnny Sánchez, experiences that sharpened both his technical foundation and his understanding of bold, deeply rooted cuisine.
Returning to Louisiana, Chef Robear brings that background to a more intimate kind of hospitality. Each private menu is developed around the season, the occasion, and the people at the table—combining classical technique with Gulf ingredients, regional traditions, and a contemporary point of view. The result is restaurant-level cooking that remains personal, generous, and unmistakably connected to place.

Preferred Founding-Client Rate
Founding Table experiences are offered at a preferred introductory rate as part of Chef Robear’s New Orleans launch series. The rate reflects genuine access — not a discount — and is available for a limited number of dates before the full-rate calendar opens.
Pricing is provided after your request is reviewed. Chef Robear will follow up personally to discuss the details of your gathering, the date, and the rate that applies. No deposit is required until a written proposal is accepted.
Photography & Privacy
Documenting the Opening Chapter
Founding Table hosts are asked to allow photography of the food, table setting, and service details. These images — taken by Chef Robear or a trusted collaborator — help document this opening season in New Orleans. Food and tablescape photography is a condition of the founding-client rate.
Guest photography is entirely optional. If guests consent to be included, their approval is sought before any image is published. Privacy is handled with the same care as the dinner itself — nothing is shared without direct confirmation.
